Over the course of one hundred days, the period in which Kassel’s Documenta 12—one of the most influential art exhibitions in the world—completed its 2007 run, there was a dramatic change in the way critics conceived of what art is and what it could be: two judges were invited by curator Roger Buergel to travel more than 1400 kilometers to the famed restaurant El Bulli and surrender themselves to the sensory ritual on offer by iconic chef Ferran Adrià.
